Is It Safe

After the jars are on the shelf. Telling a seal from a lid sitting on a jar, whether you have to boil the contents (three official texts disagree), what spoilage looks like when it looks like nothing, and what to do if you already did the wrong thing.

Everything on this hub happens after the heat is off. The jars are cool, the lids are on, and the question is no longer how do I do this but did it work, and what do I do now.

One idea runs under all five pages, so it is worth stating plainly before you go anywhere else.

A seal is a vacuum. It is not a verdict on the food. When the guide lists what proper canning does, the vacuum is the last item and it is described as a consequence: canning removes oxygen, destroys enzymes, prevents the growth of undesirable bacteria, yeasts and molds, and helps form a high vacuum in jars [F-1.9]. The vacuum is the thing you can see from outside, which is why it gets mistaken for the thing that matters. It is downstream of the heating, and it can form without the heating having done its job. Jars closed by open-kettle methods seal readily, and the bacteria in them are not destroyed [F-10.2]. That is the whole reason a page like this exists, and it is why the guide's own seal test comes with three options, none of which is a ping on its own [F-11.1].

How to tell a sealed jar from a jar with a lid on it is the mechanical one: the three tests as the guide writes them, how long to wait before you run them, why the bands come off, and what a passed test does and does not settle.

Do I have to boil my home-canned vegetables is the page where three current, official texts do not agree with each other. USDA makes the boil conditional on eight things you have to be sure of [F-11.3]. The live version of the same panel on the research centre's own site is not the same text [F-11.4]. CDC, updated this year, does not make it conditional at all [F-11.5]. Nobody cites anybody. You still have to decide what to do tonight, and that page is about deciding rather than about who is right.

What spoilage looks like — and why it usually looks like nothing covers the inspection the guide asks for, and then the sentence that makes the inspection insufficient on its own: spoiled low-acid foods may show different kinds of evidence, or very little evidence [F-11.7].

Botulism: what to actually do is short, because there is not much to say and what there is has to be exact. Botulism from home-canned food is rare. When it happens it is an emergency, the treatment is time-sensitive, and there is nothing to do at home.

I did something the internet told me to. Now what. is for the person who canned by a method they have since found out is not tested, and who has gone looking. That is not a failure. That is the check working.

What this hub will not do. It will not tell you whether your specific jar is safe. Nobody can do that from a description, and any page that offers to is guessing with your evening. What it can do is tell you what the tested sources ask you to look for, which of them disagree, and what the sources say to do when the answer is I am not sure — which, on this subject, is a normal and well-provided-for outcome rather than a failure of nerve.
