How to tell a sealed jar from a jar with a lid on it

The short version
Wait until the jars have cooled undisturbed, take the screw bands off, then run one of the guide's three tests: press the middle of the lid, tap the lid with the bottom of a teaspoon, or hold the jar at eye level and look across the lid for a concave centre [F-11.1].
Notice what is not on that list. The ping you heard from the kitchen while the jars cooled is not one of the three, and the guide never treats it as a test. It is a sound a lid makes as a vacuum pulls it down. It is worth exactly as much as that.
And a seal test, all three of them, measures one thing: whether a vacuum formed inside the jar. It does not measure whether the food was ever heated to a temperature that killed anything. Those are separate questions with separate answers, and the rest of this page is about keeping them separate.
The two questions people run together
Ask whether a jar is safe and you are actually asking two things at once.
Did the jar close? A seal test answers this. It is a mechanical question about a vacuum, a piece of metal and a rubberised gasket, and you can answer it from outside the glass in about two seconds.
Was the food heated enough? No test in your kitchen answers this. It was decided hours ago by the method you used, the recipe you followed, the size of the jar, the density of the pack and your altitude. By the time the jar is cool, that question is closed and the answer is already fixed — you just cannot read it off the lid.
The seal test is easy and the process question is not, so the seal test gets asked to do both jobs. It cannot. Keeping them apart is the single most useful habit on this side of the site, and it is why the last of the source quotes below is on this page at all.
Run the test on a cool jar with the band off
Both halves of that sentence matter.
Cool means the 12 to 24 hours the guide asks for [F-11.2]. The vacuum forms as the contents cool and contract. Prodding a warm lid gives you a reading of a process that has not finished.
Band off matters for two reasons. A band is a clamp, and it is also the thing you must not turn: the guide's instruction not to retighten a lid after processing appears twice, and the reason it gives is that retightening a hot lid can cut through the gasket and cause the seal to fail [F-8.8].
And a clamp, because a band left on and snug can hold a lid flat against the rim whether or not there is any vacuum underneath, and your finger will find a firm lid either way. The guide's own test sequence starts with removing the screw bands for exactly this reason [F-11.1].
Then use one of the three. If you want a single default: look across the lid at eye level. A properly sealed lid is visibly concave, dished down in the centre, and once you have seen a dozen of them you can read a shelf of jars in one pass.
What a failed test means, and what it does not
A jar that fails the test on day one is not a disaster and not a mystery. Some proportion of lids do not take. Check the rim for a nick, which is the usual culprit and is easy to feel with a fingertip.
You then have three tested routes, all from the guide: reprocess within 24 hours with a new lid and the same processing time, freeze it with the headspace adjusted, or refrigerate that jar and eat it soon [F-9.9]. Pick whichever suits the evening. None of them is second best.
What a failed seal does not mean is that the food is dangerous right now. A jar that never sealed has been sitting in air, at room temperature, which is the condition under which spoilage announces itself in the ordinary ways — and the guide's own instruction still applies: do not taste food from a jar with an unsealed lid [F-11.7]. Refrigerate it or throw it away. Do not sample it to decide.
The failure that is worth watching for later
A seal that formed can fail afterwards, and the guide tells you what that looks like: spoilage organisms produce gas, the gas pressurises the food, the lid swells and the seal breaks [F-8.9].
That is a visible event, and it is the reason the bands come off for storage. A swollen lid on a bandless jar is obvious from a metre away. A swollen lid under a screwed-down band may look like nothing at all, because the band is doing what a band does and holding it down.
This is the rare case where the guidance costs you nothing to follow. Take the bands off, wash them, keep them. You get a free spoilage indicator on every jar for the price of a step you were arguably supposed to do anyway.
The honest summary
Three tests, run on a cool jar with the band off, tell you a vacuum is present [F-11.1]. That is a real and useful thing to know, and it is worth being exact about how little it is. It tells you the closure worked. It tells you nothing about the heat the food received. A jar has to have both before it belongs on a shelf, and only one of the two can be checked afterwards — the other was settled by the process you ran, before the lid went on. A jar that fails the seal test after a tested process is a different question again, and it has three tested answers [F-9.9].
So the seal is not a verdict on the food. Jars sealed by methods that never heated the food at all pass every one of those tests [F-10.2]. If you need confidence about the process rather than the closure, it comes from having used a tested method for that specific food — which is a decision made before the lid went on, not a reading taken after.
The three tests, in full, from the guide
After cooling jars for 12 to 24 hours, remove the screw bands and test seals with one of the following options: Option 1. Press the middle of the lid with a finger or thumb. If the lid springs up when you release your finger, the lid is unsealed. Option 2. Tap the lid with the bottom of a teaspoon. If it makes a dull sound, the lid is not sealed. If food is in contact with the underside of the lid, it will also cause a dull sound. If the jar is sealed correctly, it will make a ringing, high-pitched sound. Option 3. Hold the jar at eye level and look across the lid. The lid should be concave (curved down slightly in the center). If center of the lid is either flat or bulging, it may not be sealed.

Three tests, and the guide says one of the following — you do not have to run all three, though there is nothing stopping you.
Read the caveat inside Option 2, because it is the one most often dropped when this passage gets summarised elsewhere. A dull sound means the lid is not sealed or food is touching the underside of the lid. Those are very different situations, and a jar filled to the brim with a thick food can fail the spoon test while being perfectly well sealed. That is why the guide offers three tests rather than one.
Note also the words the guide uses in Option 3: a flat or bulging centre "may not be sealed." Not is not. This is a screening test, and the guide writes it as one.
And note what none of the three options mentions: the ping. The sound a lid makes as it snaps down during cooling is not in this passage at all.
How long to wait, and the thing not to do while waiting
Cool the jars at room temperature for 12 to 24 hours… The food level and liquid volume of raw-packed jars will be noticeably lower after cooling. Air is exhausted during processing and food shrinks. If a jar loses excessive liquid during processing, do not open it to add more liquid.

The test comes after the cooling, not during it. A jar that has not finished cooling has not finished forming its vacuum, and pressing on a lid mid-cool tells you nothing you can use.
The second half of this quote answers the question that sends most people looking in the first night: the liquid dropped. That is expected in a raw pack. Air is driven out during processing and the food shrinks, so the level falls. It is not a sign of failure.
The instruction attached to it is unambiguous and it is the part people struggle with: do not open the jar to top the liquid back up. Opening it ends the process you just ran. Low liquid is a quality problem — food above the liquid line darkens — and opening the jar converts a quality problem into a safety one.
Do not retighten, and take the bands off
Do not retighten lids after processing jars.
When you remove hot jars from a canner, do not retighten their jar lids. Retightening of hot lids may cut through the gasket and cause seal failures.
Screw bands are not needed on stored jars. They can be removed easily after jars are cooled.
You can more easily detect some types of spoilage in jars stored without screw bands. Growth of spoilage bacteria and yeast produces gas which pressurizes the food, swells lids, and breaks jar seals.

Two instructions, and the guide gives a reason for each, which is the useful part.
Do not retighten. The guide says this twice, on two separate pages, which is not something it does often [F-8.8]. A hot lid is soft. Turning the band down on it can cut through the gasket, and the seal that was forming fails. The instinct to snug up a loose-feeling band on a hot jar is a strong one and it is the wrong one.
Take the bands off for storage. The reason is stated outright and it is a detection reason, not a tidiness one. When food in a jar spoils, gas is produced, the lid swells and the seal breaks. A band left screwed on can hold a broken lid in place and hide exactly the failure you would want to see from across the room. The band's job is finished when the jar has cooled.
The sentence that settles what a seal proves
Although jars may seal using this method, bacteria are not destroyed and can easily grow and multiply in the 'sealed' jar.

The quotation marks around "sealed" are the source's own, and they are doing work: the jar is sealed, and the word still needs holding at arm's length.
Read what it concedes before what it warns. Jars closed this way do seal. The vacuum forms, the lid goes concave, the spoon rings. Every test on this page passes.
That is the whole argument in one sentence, from a land-grant Extension service. A seal test measures a vacuum. Bacteria are destroyed by heat, over time, at a temperature the food actually reached. A jar can hold a fine vacuum around food that was never heated to anything. The tests above tell you the closure worked. They do not tell you the process did, and nothing you can do from outside the glass will.
What people ask next
The lid pinged in the canner. Does that count?
It counts as a lid moving. A ping is the sound of the metal dome being pulled down as the jar cools and the vacuum forms, and it usually means the vacuum is forming. It is not one of the guide's three tests, it happens well before the 12-to-24-hour mark when the tests are meant to be run [F-11.1], and some jars seal without an audible ping while a few make a noise and then spring back. Wait, then test with your hands and your eyes.
It sealed but the band spins freely. Is that a problem?
No. The band is not holding anything after the jar cools — atmospheric pressure is. That is why the guide says screw bands are not needed on stored jars and can be removed once the jars are cool [F-8.9]. A loose band on a cooled jar is a band doing nothing, which is its correct state at that point. Take it off, wash it, dry it and keep it for the next batch.
One jar out of seven did not seal. Do I have to throw it out?
No, and this is one of the places where the tested guidance hands you three clean options. Check the jar rim for tiny nicks and change the jar if you find one, fit a new lid and reprocess within 24 hours using the same processing time; or adjust the headspace and freeze it instead; or put that single jar in the refrigerator and eat it within several days [F-9.9]. Can I check the seal by lifting the jar by its lid?
People do it and it is not in the guide, so this site is not going to tell you it is a test. It is also a way to drop a full jar of hot food on your foot. The three options the guide gives cost nothing and are written down; use those [F-11.1].
The lid is concave and the jar passed. Am I finished?
You are finished with the seal question. Whether the contents need boiling before you eat them is a separate question, and the current sources disagree about it — see Do I have to boil my home-canned vegetables.
